We proudly make authentic Valencian Paella in Miami
Valencia has been the cradle of rice cultivation in Spain and its introduction is attributed to the Arabs during the 8th century. In Valencia, the region of Sueca and the lands next to the “Albufera of Valencia,” are the oldest and most traditional.
LA VALENCIANA is considered the authentic Spanish paella made with only meat and fresh vegetables. Paella was the comfort food of the working class; although Valencia is on the Mediterranean, seafood was never used to prepare the original paella.
La Fideuà de Gandia is a traditional dish attributed to fishermen of Grao de Gandia, in Valencia province. More than a century old, La Fideuà has become one of the most emblematic dishes of Mediterranean cuisine.
One of our favorite rice dishes is the “Senyoret,” which means “Young Gentleman” in the Valencian language. It ‘s a seafood rice and it is called that, because all the ingredients are peeled and treated so that the diners do not stain their fingers. We enjoy all the delicious flavor of this rice and will only need a fork.
Fideuá with Portobello Mushrooms and Organic Chicken
One of the variants of this exquisite dish is the combination of Pork Rib, Portobello Mushrooms and Organic Chicken. The base with which we prepare this rich broth consists of chicken and a selection of fresh vegetables, which together with the carefully selected Portobello mushrooms give it a downhome flavor.
A classic Valencian rice, that takes its color from the squid used during its preparation. Cook in a paella “caldero“, this dish gets its whole flavor from the chipirón squid to rise to the top of the list of seafood rices.
Another variant of the Valencian paella that we prepare is rice with cuttlefish and mussels. As in the fideuá or the seafood paella, we use different types of fish to elaborate an exquisite “fumet” that gives it a unique flavor.
